A few reasons: First, it just takes a lot of time to edit things! Second, editing can often produce videos that don't feel natural any more because you've cut together different snippets that are recorded at different times.
Finally, I can't speak to any rambling, but for small mistakes, it makes sense to keep the entire thought process in there so that students realize that everyone makes mistakes regardless of how well they know the subject. We've heard lots of students specifically state that they appreciate seeing Sal make mistakes because it makes them more comfortable with their own. Leaving the videos unedited makes the videos more cohesive and makes them feel more similar to a tutor just who's sitting next to you and working through the problems with you.
