With reference to image processing, there are two introductory-to-intermediate level courses available on Coursera (both of them are very good):
1) NorthWestern University: Fundamentals of Digital Image and Video Processing (Coursera)
2) Duke University: Image and Video Processing: From mars to Hollywood with a stop at the hospital (Coursera)
Both these courses are very good and they gradually advance towards the level of difficulty in the course.
As for computer vision,
A set of video lectures by Dr. Mubarak Shah (UCF - Center for Research in Computer Vision) is available on Youtube (UCF Computer Vision Video Lectures 2012). This is a good starting point towards getting a brief idea of computer vision.
