I'd definitely consider hiring them, but with a caveat - a Coursera course, no matter how extensive and the Github repository it helps you create, doesn't make you a trained Data scientist. It makes you an enthusiast, and if you're talented all the better - but it can also give you enough knowledge to be dangerous as well as too focused on being a good technician.
If you accept the assertion above, and are willing to learn and work hard, you're probably a better hire than the average candidate that I get to interview.
